Key Lime Pie

Key Lime Pie turned 5 in October.

She is as wild and enthusiastic about life as ever.

Her favorite food is oatmeal (uncooked) with milk and raisins and honey, Ramen Noodles, and Macaroni and Cheese. Unlike Banana Cream Pie, she refuses to eat pretty much everything else.

She loves toy horses and playing baby ponies.

Her favorite thing is to go play with friends or at the park, but she will settle for playing Super Mario Smash Brothers Brawl on the wii or UNO with me.

She is my only child who truly likes putting puzzles together.

Birthday #4 for Key Lime Pie

key Lime Pie is 4!

(and I’m so glad because 3 is such a whiny age!)

Her favorite song is “The Smile Song” …If you chance to meet a frown, do not let it stay…

She also often asks me to sing “The Sunday Bean song”

which my brothers probably think is “Beans, beans, the magical fruit,” but it’s actually “Jesus wants me for a Sunbeam.”

And the “Naughty Flower song” which is “In my pretty garden the flowers are nodding” but we have to sing extra verses:

“In my pretty garden the flowers are silly” and “In my pretty garden the flowers are sleeping.”

Key Lime Pie likes to play baby horses, so she and I and Banana Cream Pie spend some time every day crawling around on the floor whinnie-ing and “eating” grass.

She is potty trained FINALLY. I tried lots of things, but the one that motivated her was that if she went on the potty, she could watch Dora the Explorer. We watch a lot of Dora, but I don’t have to change diapers. It is worth it.

Her favorite things to eat are toast, cheese, bananas, and raman noodles.

She likes to pretend to be Flynn Rider and carries around her “Flynn Rider purse.”

Last year for her birthday, she requested Chocolate Rapunzel Cake.

I don’t think I’ve ever had a kid with such a long memory. This year she requested Vanilla Flynn Rider Cake. And she wanted it to be round instead of square.

So I had the genius idea that if I couldn’t find a little Flynn Rider doll, that I could print out a little picture of the guy and tape him to a toothpick and stick him in the middle of the cake and voila! Flynn Rider Cake.

but then the Man of the House and I got into an intense, but civil, debate over this TV news anchor which maybe I will blog about later, or maybe not, because I’m kind of bored with the whole thing now.

Anyway, I got distracted by the debate and almost forgot to make the frosting until the last minute, hence I did forget to make the little Flynn Rider guy.

Key Lime Pie didn’t care. She had round vanilla Flynn Rider Cake.

Sadly, my new camera no esta aqui. Here, however, is my delicious recipe.

***Honey Vanilla Cake***

2/3 cup coconut oil
1 cup white sugar
1/4 cup honey
2 eggs
1 Tbsp vanilla
3 cups cake flour
2 1/2 tsp. baking powder
3/4 tsp. salt
1 1/4 cup evaporated milk (not sweetened condensed milk)

1. Preheat the oven to 325*F. In an electric mixer, cream the coconut oil with the sugar and honey. It will whip up fluffy just like butter does.

2. Add the eggs and vanilla, continue to beat on medium speed until the eggs are well incorporated.

3. Combine the dry ingredients in a separate bowl. Add them to the sugar mixture alternately with the milk until everything is blended in.

4. Pour the batter into 2 round cake pans and bake for 25-30 minutes.

Top with your favorite Vanilla buttercream frosting. I can’t tell you my recipe. I just whipped a stick of butter and added a little milk and powdered sugar until I thought it tasted right.

But I think the cake itself has such a lovely subtle flavor and frosting kind of covers it up (haha) so really just leave the frosting off if your family will let you get away with it.

Happy Day

This little Cutie Pie is so unique! It always amazes me how different each of my children are.

She loves to fill pages in with color and will spend over an hour carefully filling a shape in with marker. While she colors, she sings, “A Happy Day, a happy day.” (Think Mickey and the Beanstalk-“My what a happy day”)

Every morning, she asks for toast with jam and a “friday egg.” I love that she likes eggs. Such a healthy food.

Of all my children, she is the only one who has loved puzzles. She loves putting the pieces in wooden puzzles, things that snap together, building towers with blocks –anything that is like a puzzle.

She is also the most rambunctious and fearless. She will jump off anything and actually laughs and asks for more when her big uncles throw her up in the air.

Right now she loves farm animals, especially horses and “oinkies”. She spends lots of time each day tying up her horses, building walls for them to walk on, and riding anything that might substitute for a horse, like the arm of my overstuffed rocking chair– which now has no cloth covering it, thanks to her rough riding.

She blames anything bad on Swiper the Fox. She will often ask me to watch over her food/toys/clothing so that “Swiper can’t get it.”

When I ask her to pick up her shoes or jacket, she will first say, “But I’m too bigger enough to do that.” When I insist, she will sometimes decide to comply and sigh and say, “alright.”

She and I have had a great time together this fall with all the big kids gone to school. We’ll see what happens when we throw a new baby in the mix.

Happy Birthday, Cutie Pie

Cutie Pie is 3! She loves anything about animals, especially horses and kitty cats. Often, she comes down the stairs on her hands and knees saying “Meow, meow.” But if I say, “Hello little kitty cat.” She will say, “I’m not a kitty cat, I’m a Julia.” She also likes “Dora the Explorer” and Donald Duck. We were watching “The Three Caballeros” and she said, “That’s Uncle Donald.” I said, “You mean, Donald Duck?” “Yes,” she said,”Maybe I love him.”

All her siblings are in school, so she often asks me to take her to her school. She still has 2 1/2 years until she gets to go to Kindergarten. Sometimes I agree to take her to her school and we go to the park.

For her birthday she wanted Chocolate “Dapunzel” cake. (chocolate Rapunzel Cake) I couldn’t find any Rapunzel cake decorations, so I just made Texas Fudge cake and said, “Here you go, chocolate Rapunzel cake.”

She was completely satisfied.

Then, only a week (or 3) late, I finished her Kitty-cat slippers.
Didn’t they turn out so cute?!!

I used this amazing tutorial by “Made by Rae” for Dragon Slippers.

I felt kind of guilty for turning such an awesome boy gift into a girly version–it is so hard to find things to make for boys. But I will be making the Dragon version for Bubba. They only took about 3 hours to make–including embroidering the kitty faces. The only bad part is I still have 4 more children who are expecting slippers. They all needed slippers this year, and I was just going to buy them. But slippers cost $10 a pair–for the ugly ones– and that’s $50 for just the kids. I got enough fleece (I think) to make everyone slippers for $15.
